Working the vines is a serious task, demanding great application and therefore, Vincent is very precise and careful about using minimum treatments. For white wines, the grapes are placed in a press for 3 hours. After 24 hours racking at low temperature, the juice is placed in barrels to ferment (30% of new oak barrels) and then the wines are bottled after at least 12 months of maturing in barrels. For red wines, a 15-day fermentation process is done after pressing. Ageing is done in oak barrels (20% new). Red wines are made to be rich fruity wines with a blend of tannins and typical of well-ripened grapes.
Should be served between 12 to 14 degrees.
