Grapes are all hand-picked and sorted then further triaged on a sorting table. For the whites, a bladder press is used (settling the juice for one day before barrel fermentation and a weekly batonnage until malolactic fermentation starts). New oak barrels are used up to 25% for the Village wines and up to 35% for the Grand Cru wines. For the red wines, there is a complete destemming before fermentation in large stainless steel barrels. There is a 5 days of cold naceration and twice daily pigege. Wines will be maturing for 12 to 14 months in their barrels before bottling.
Should be served between 14 to 16 degrees.
Beef terderloin, duck breast, pigeon, lamb, pasta and risotto. Cheese: Comte, tomme, brillat savarin.
