Philippe Colin’s heritage runs deeply in Chassagne Montrachet. He grew up with his brother Bruno, in the middle of vineyards as their father was also a well-known wine producer. This is where he gained extensive knowledge, sparking his passion for qualitative winemaking. When their father retired, Philippe and Bruno decided to split up the estate into 2 separate domaines in order to respect their different winemaking approaches. So, in 2004, the Domaine Philippe Colin was created and it has, since then, kept on growing (12 hectares). Now, he has 24 appellations in total (60% white wines and 40% red wines) from Bourgogne, village and grand crus appellations. Philippe’s philosophy is to intervene as little as possible to allow the purest expression of Terroirs as each plot can be so different.

Handpick grapes during the harvest when maturity is there and depending on the weather conditions and yields. Philippe uses a pneumatic press for the slow and soft extraction of the juice. For red wines, grapes are 100% destemmed and undergo a cold soak. Vinification takes place in temperature-controlled tanks to control alcoholic fermentation. Philippe is one of the first wine producers to use big barrels (450 / 500 litres) to age white wines in order to limit the influence of wood which makes this producer so unique!
Should be served between 14 to 16 degrees.
It will pair very well with your tapas as an aperitif or with BBQ with friends.
