Working the vines is a serious task demanding great application and therefore Vincent is very precise and careful on using minimum treatments . For white wines, grapes are placed in a press for 3 hours. After 24 hours racking at low temperature, the juice is placed in barrels to ferment (30% of new oak barrels) and then wines are bottled after at least 12 months maturing in barrels. For red wines, 15 days fernentation process after pressing. Aging is done in oak barrels (20% new). Red wines are made to be rich fruity wines with a blend of tannins and typical of well ripned grapes.
Should be served between 14 to 16 degrees.
With its virile but well balanced tannins, preference will be for forceful meats like veal, lamb leg, grilled prok. Cheese: Mont D'Or, Vecherin, Tomme de Savoie, reblochon.
