Domaine Hudelot Noellat wines have been among the best in Burgundy for generations. The Domaine was run by Alain Huedlot Noellat (who was a really close friend of my grand father) for over 30 years before stepping down in 2007. Since then, Alain’s grand son, Charles Van Canneyt took over and continued to produce amazing wines from Cote de Nuits. From 2 year to 15 years.
During the harvest, a careful sorting is done in the vineyards followed by another sorting in the winery. The juice is brought into concrete enameled fermentation tanks. Charles' philosophy is to keep 20% of the stems with the juice, especially in vintages and appellations where the fruit can support extra tannins. The wines are aged in oak barrels before being bottled.
Should be served between 16 to 16 degree.
It's a Grand Cru, so you can pair it with more elaborate dishes (made for special occasion) like White truffle pasta, beef with fois gras on top, any type of cheese or with chocolate deserts.
